Sugar is classified under at least 61 different names on food labels. Sucrose and high-fructose corn syrup, for example, are popular names, as are barley malt, dextrose, maltose, and rice syrup, among others.
Although product labels list total sugar content, manufacturers are not allowed to indicate whether that total contains added sugar, making it difficult to determine how much of that total comes from added sugar and how much comes from naturally occurring sugar in foods like fruit or milk. As a result, keeping track of how much added sugar we consume is extremely difficult. 3,2
The American Heart Association (AHA) recommends that men consume no more than 9 teaspoons (38 grams) of added sugar per day, and women consume no more than 6 teaspoons (25 grams).
The AHA recommends that children consume about 3-6 teaspoons (12-25 grams) of sugar each day, depending on their age and caloric needs.

For priming, I simply dissolve plain white sugar in boiling water in a coffee mug and apply it to the bottling bucket shortly after I begin moving the beer to the bucket. I try to purchase supplies from my local brewing shop, but if I need to order anything online, I typically go to http://farmhousebrewingsupply.com, which usually has fair shipping, or http://morebeer.com, which has free shipping on orders of $70 or more (I believe). Both offer corn sugar at a lower price than Midwest. If you’re interested in knowing, Midwest was sold to Anheuser Busch. Personally, I have no reservations, but certain people refuse to support them. Getting on Farmhouse’s email list is a good idea because they sometimes have some great hops sales.

Candy-making I’m trying my hand at candy making once more, and I find the variety of recipes for the same product both fascinating and perplexing… particularly when it comes to this subject. Substitution appears to necessitate the type of I you provided, as well as a healthy dose of trial and error. Corn syrup or Karo are specifically mentioned in most “consumer” recipes. Glucose syrup is used in most “professional” recipes. I’m guessing they can be used interchangeably. But it’s “pro” recipes that call for both glucose and invert syrup that get me very confused. Isn’t glucose already considered “inverted”? Using both isn’t difficult, but knowing why is. I have used DME a lot for bread and pizza dough. Isn’t DME essentially the same as maltose syrup if it’s hydrated… or should I go to a nearby Chinese/Korean market?

Error correction “Glucose syrup is used in the majority of “professional” recipes. I’m guessing they’re directly interchangeable.” I wanted to suggest that glucose syrup could be substituted for Karo, not the other way around.

Cheddar cheese is available at Kaufland, and the cheese guy who speaks at least five languages in the Erlangen market on the street has a nice organic cheddar. It’s available at Rewe in the “unique” cheese cooler. If you inquire at the cheese counter at Globus, they typically have it. But this isn’t your typical cheddar cheese. While the flavor is approximate, it melts poorly. Lidl occasionally has vacuum-sealed British cheddar that freezes well. It is strongly suggested! It is available during British week as well as other times. Kerry Gold Irish cheddar is occasionally available at Aldi.
