This is a fantastic recipe. I gave it five stars, and unlike some of the other reviewers, I did not add the spices. I was not in the mood for a spice muffin. I was looking for a banana nut recipe and thought this one looked delicious, especially with the real butter in the ingredients and the photos. Make sure the wet ingredients are mixed first. The key is to mix all by hand to avoid overmixing. I added walnuts and mixed it up the night before, then refrigerated it until morning to bake fresh. The muffins did not adhere to the paper liners. Recipe is delectable!
These muffins are fantastic!! When we have mushy bananas, we bake these. I replaced the butter with one individual applesauce cup and they turned out just as well, but with less fat!! I typically apply a half teaspoon of vanilla extract and a pinch of cinnamon. I still make mini muffins, and you MUST add several minutes to the cooking time (if you want them golden on top and not mushy). They are devoured by the children!!
